Yesterday, my target was 2 lots of log book homework and possible swimming. We managed to achieve 1 lot of homework… And some baking.
Joel was keen to help, too. Today’s project was jam tarts. Lily crumbed the flour and marge and did a really good job, then mixed in the water (with a little help in the final stages of making it look like pastry from me). Joel washed the tin and greased the hollows (oo-er). Joel then cut the shapes & Lily put them in the hollows. At this point Joel lost interest so Lily finished off with homemade plum jam and the topper shapes.
Turns out you need less jam than you’d think, as it bubbles up and overflows. And then you have to prize the tarts out of the pan without mashing them. These 3 were the first samples consumed, given that they suffered a little in the extraction process…
However, it turns out the plum jam has weathered 3 years remarkably well. An ideal discovery when I’ve just re-embarked on a low sugar, low carb diet…
